Processing Process of our Giant Squid Rings

The processing of our Peruvian giant squid rings must follow strict hygiene standards and technical specifications, with the core processes as follows:



  • Raw material acceptance and pretreatment

    • The raw materials are mostly freshly caught Peruvian giant squid (or frozen squid), and their quality (such as meat elasticity, freshness, and presence of peculiar smell) needs to be inspected.

    • If they are frozen squid raw materials, they need to be slowly thawed at low temperatures (0-4) to avoid the meat from falling apart.

  • Raw material processing

    • Remove the squid head, internal organs, and outer skin (the outer skin of squid is hard and needs to be peeled off to improve taste).

    • Separate the body part, remove the internal cartilage (transparent horny structure), and retain the complete meat tube.

  • Cutting into rings

    • Cut the body meat tube into uniform rings horizontally (usually 1-1.2cm width, 3-9cm diameter, i.e., "squid rings").

    • Screen out unqualified products (such as rings with uneven size or damage) to ensure uniform specifications.

  • Cleaning and blanching

    • Rinse the giant squid rings with clean water to remove surface mucus and impurities.

    • Blanch them for a short time (water temperature 80-90) to set the shape, remove the fishy smell, and reduce microbial contamination.

  • Seasoning or pretreatment (optional)

    • Some products will be seasoned (such as adding salt, pepper, spices, etc.) or coated with starch and breadcrumbs (for fried prepared squid products).

  • Freezing and packaging

    • Use individual quick freezing (IQF) technology to freeze quickly at below -30 to avoid the squid       rings from sticking together and maintain the taste.

    • Package according to specifications (such as 200g/bag, 500g/bag,1000g/bag), and mark the production date, shelf life, specifications, and other information.

    • After packaging, store in a cold storage at below -18, waiting for export or sale.

  • Quality inspection

    • Inspect microbial indicators (such as total colony count, pathogenic bacteria), heavy metal content, sensory quality,  etc. The products can leave the factory only after meeting the export or domestic sales standards.

Nutritional Value of giant Squid Rings

Giant squid (Dosidicus gigas, also known as "jumbo flying squid") is a large cephalopod. Its processed product, "squid rings," retains the core nutritional components of the squid, as follows:



  • High protein, low fat: Peruvian squid rings contain about 15-20% protein, with a comprehensive amino acid composition, including 8 essential amino acids for the human body (such as lysine and methionine),      making them an excellent source of animal protein. The fat content is only 1-2%, mainly unsaturated fatty acids (such as DHA and EPA), which help regulate blood lipids.

  • Rich in minerals: They are rich in minerals such as calcium, phosphorus, iron, zinc, and selenium. Among them, calcium and phosphorus are beneficial to bone development, iron is involved in hemoglobin synthesis,      and zinc is crucial for immune function and growth and development.

  • Vitamin content: They contain vitamin B12 (promoting nervous system health), vitamin E (antioxidant), and B vitamins (participating in energy metabolism).

  • Note: Squid rings have a relatively high cholesterol content (about 200-300mg/100g). It is recommended to consume them in moderation, and people with hyperlipidemia need to control their intake.

Uses of giant Squid Rings

Peruvian squid rings have a firm texture, tender taste, and are easy to store after processing, so they have a wide range of uses, mainly in the following fields:



  • Catering consumption:

    • As home-cooked dishes or restaurant dishes, they can be cooked by frying, grilling, stir-frying, boiling, etc. (such as "crispy squid rings" and "black pepper grilled squid rings").

    • They are popular ingredients in fast food restaurants and snack bars (such as fried squid rings with tomato sauce, used as hamburger side dishes or standalone snacks).

  • Raw materials for the food industry:

    • Used in the production of frozen prepared foods (such as quick-frozen squid rings, which are convenient for families or catering enterprises to process directly).

    • Used as raw materials for ready-to-eat snacks (such as seasoned grilled squid rings and charcoal-grilled squid rings).

    • Deep-processed as auxiliary materials for products such as surimi and fish balls to improve taste and nutritional value.

  • Feed and by-product utilization: The leftover materials (such as outer skin and cartilage) generated during processing can be made into aquatic feed to maximize resource utilization.
